This is a brief and simple description of the research projects I have conducted in the last few years in the area of health and sustainability.
Statistical Models to Explain Household Food Waste
Using the Comprehensive Action Determination Model, I examined the different factors that may predict generation of food waste in the household using samples from the US, Canada, and Japan. I found that environmental barriers were the greatest direct contributors of food waste across all samples. These results emphasize the need to disseminate food management skills among the population to sucessfully reduce food waste.
Food Waste Among Mexican Households
In this descriptive study, I explored the motivations of Mexican families within the US-Mexico border to maintain minimal household food waste. I found that primary motivations were a desire to take care of family’s finances and ethics. Within these ethical principles the concept of the value of food emerged - food is important regardless of its economic value, is an important source to maintain health, and is sacred.
Barriers for the Adoption of Plant-based Diets for the Prevention of Type 2 diabetes
Plant-based diets are good for human health because they prevent many chronic diseases including diabetes. They are also good for planetary health because of their lower carbon footprint requiring less energy, land, and water compared to animal-based foods.
In this qualitative study, I explored the barriers and strategies for the adoption of a plant-based diet among US Hispanics that may be at risk for developing T2D. Results indicated that a system of social support as well as careful planning are key factors for the successful adoption and maintenance of this type of diet.
Food Waste Reduction Interventions
As part of a larger team, I examined the impact of a web-based educational intervention to decrease household food waste among Arizona families. Our team found significant reductions in food waste at the end of the interventions, supporting the efficacy of our educational modules.
